You start in Nizwa, where the fort sits at the center of Oman's oldest trading hub. Your Omani guide walks you through the stone corridors, pointing out the architecture that's held the region together for centuries, then leads you into the adjacent market where vendors sell halwa—a date-based sweet that tastes nothing like what you'd expect. From there, the landscape shifts. Day two takes you into the desert and down into water. Then you drop into Wadi Bani Khalid, where year-round pools sit surrounded by plantations and the water is cold enough to make you gasp.
