The experience
The morning begins at 10 a.m. in the woods on the farm property. A professional truffle hunter and his Lagotto Romagna (a dog bred specifically for truffle work) lead you into the search. For about an hour you're actively looking, learning how to spot the signs and understanding why this work has shaped Tuscany for centuries. You're not watching. You're doing the digging and the finding.
Back at the farm mid-morning, you move into the kitchen to make tagliatelle from scratch. The instructor walks you through rolling and cutting fresh pasta, and what you make becomes your lunch. The meal is served on the terrace facing the vineyards and olive grove: tagliatelle with cheese, pepper and truffle from the morning's hunt, local appetizers with cheese and cured meats, and desserts like apple pie and pear crumble. Wine and extra virgin olive oil from the property are tasted alongside.
