The experience
You start with an apron and a workstation. The class walks you through the recipes of Montalcino tradition: pinci (hand-rolled noodles), dumplings, sauces built on what grows nearby, and traditional sweets made without fuss. Everything is ingredient-forward: no shortcuts, no industrial substitutes. You're not watching a demonstration. You're mixing, kneading and shaping the dough yourself, learning the hand movements that make the pasta work.
Lunch arrives when the cooking is done. The table holds the dishes you've just made: the pasta you rolled, the sauces you stirred, the sweets you shaped. A glass of Rosso di Montalcino sits beside your plate. You eat in the company of the local lady who taught the class and the other people in your group, tasting the results of the morning's work while the wine from local vineyards sits in your glass.
You leave with a certificate of participation and printed copies of every recipe you made, so the techniques stay with you after you're home.
