The experience
The class centers on making fresh pasta by hand (ravioli and tagliatelle) learning how to balance ingredients for the dough and experimenting with seasonal fillings and sauces. In summer that means fresh tomato sauce. In winter, richer cream-based options. The chef shares techniques for each step, so you understand not just the what but the why behind each decision.
You'll also prepare bruschetta with ripe tomatoes, fresh mozzarella and extra virgin olive oil, learning how to maximize simple ingredients into something memorable. The course finishes with tiramisu: mascarpone, ladyfingers and coffee layered and chilled, with the chef revealing the secrets for a fluffy cream and balanced flavor. By the end you'll have made four dishes and eaten them as lunch and dinner.
A recipe booklet with all the preparations goes home with you, so you can cook these dishes again and share them with people who matter to you. The class stays small, which means the chef can watch your technique and adjust as you work. The guide speaks English or Italian, and children from six years old can join.
