The Experience

The minivan picks you up in the late afternoon and drives you out to the winery in Montalcino, about 45 minutes south of Siena. You're not here to watch someone else work — you're kneading flour and eggs on a wooden board, learning to roll the pinci, the hand-rolled pasta that's been made the same way in this region for generations. It's simpler than it sounds and harder than you'd expect. Salt, local flour, a few eggs, and your hands do the rest.

While the dough rests, your guide takes you down into the wine cellar. This is where the real story lives — the Brunello di Montalcino aging in oak, the history of how this small town became known for one of Italy's most serious wines. You learn what makes Montalcino different from the rest of Chianti, why the soil matters, why the aging matters. It's not a lecture; it's a conversation with someone who knows the place.

As the light starts to turn gold, you sit down at a table with the producer. The pasta you made is in front of you, dressed simply with Tuscan sauce. Then comes the rest — a typical Tuscan appetizer, a second course, local cakes. And the wines: a tasting of four, moving through a Chianti and an Igt Poggio Apricale before landing on the Rosso di Montalcino and finally the Brunello. The producer pours, talks, answers questions. You eat slowly. The sun goes down.

After dinner, the driver takes you back to the meeting point in town. You're full, a little tired, and you've got flour under your fingernails.
