The experience
Flour, water and eggs. That's all you need to learn how to make ravioli, tagliatelle, cappelletti and gnocchi the way Tuscan cooks have for centuries. You work in a professional kitchen inside a villa set into the Chianti hills, 30 kilometers from Florence, with an expert chef standing beside you to show the technique, answer questions and keep you on track. The class runs three hours, and you make the pasta and the sauces that go with it yourself, using seasonal local ingredients the chef has chosen.
After you finish cooking, you move to the table. Lunch includes appetizers of local cold cuts and cheese, the fresh pasta you just made dressed with the sauces you prepared, a glass of Chianti wine, dessert, water and coffee. The meal is the point: you taste what your hands made, paired with wine from the region, in a room overlooking the countryside. Before you leave, the chef gives you printed recipes so you can reproduce the dishes at home.
