The experience
Chianti's SiChef cooking school runs this class for anyone who wants to learn, whether you've cooked pasta before or never have. The morning or afternoon begins with a theory session where the chef walks through the history and techniques behind fresh pasta shapes (tagliatelle, ravioli and others), and the science of making creamy ice cream. Then you move to the kitchen and make both yourself, kneading dough by hand and using the pasta machines, learning how to fill and shape ravioli, and selecting and balancing ingredients for ice cream with milk, cream, sugars and seasonal flavors.
At the end you eat what you've made: fresh pasta filled with ricotta and spinach in sauce, and homemade ice cream with seasonal ingredients, served as part of your lunch or dinner depending on which course time you choose. Bottled water and wine are included. You leave with a certificate of participation and printed recipes so you can replicate the dishes at home.
