Hand-roll tagliatelle and ravioli, then churn creamy gelato in one afternoon

A 3-hour hands-on cooking class in Chianti where you make fresh pasta from raw dough and Italian vegetarian ice cream from scratch. The course starts with the history and techniques of both crafts, moves into the kitchen to shape pasta by hand and machine and balance ice cream ingredients, then ends with tasting what you've made and receiving a certificate and recipes to take home.

The experience

The class opens with a theory session where an expert chef walks through the shapes, doughs and fillings that define fresh Italian pasta, then the techniques for building ice cream with milk, cream, sugars and seasonal fruit. You'll learn why the ratios matter and how the best gelato tastes nothing like what comes from a machine. Then you move to the kitchen.

In the practical part, you knead pasta dough by hand and work with a pasta machine to roll it thin, then shape tagliatelle and ravioli with seasonal fillings. At the same time, you're selecting and balancing ingredients for the ice cream, learning how to layer flavors so each spoonful tastes clean and bright. The apron and all the professional equipment are there. You're not watching a demo. You're doing the work.

At the end, you eat what you've made together with lunch or dinner (depending on which time slot you book) and bottled water. You leave with a certificate of participation, the recipes you used printed out, and the muscle memory of how to do both at home.

Is this one for you?The 3-hour commitment fits a morning or afternoon in Chianti without consuming your whole day, so you can visit a winery or explore the region before or after. The class is hands-on from start to finish (you're making both the pasta and the ice cream yourself, not watching), so it suits anyone who wants to learn by doing rather than by observation.
