Private Pasta Cooking Class in Tuscany: Hand Made Pasta
You make the pasta, not watch someone else make it
A private cooking class in a Tuscan farmhouse where you learn to hand-roll fresh pasta doughs, fill them, prepare sauces, and eat what you've cooked together with wine. The chef, a professional sommelier, teaches you two pasta types of your choice, from tagliatelle to ravioli to gnocchi, using ingredients from the organic garden. The class runs about four and a half hours and ends with a recipe book so you can make it at home.

The experience
You arrive at a country house in the rolling Sienese hills and walk into a professional kitchen with direct access to the garden where the ingredients grow. The chef meets you with a small welcome appetizer and wine, then moves straight into the work: learning the ancient technique of hand-rolled pasta. You'll make two types from a menu that includes spaghetti alla chitarra, ricotta and lemon ravioli, pici, tagliolini, tortelli, and gnocchi: each one a different shape and dough. The chef guides you step by step through rolling the dough, filling it, and shaping it by hand, the way it's done in the best Italian tradition.
While the pasta rests, you prepare the sauces together: fresh tomato and ricotta for one, butter and sage for another. Everything comes from the farmhouse organic garden or nearby small farms. The kitchen work takes up most of the morning or afternoon, and there's room to personalize what you make based on what interests you most. At the end, you sit down under the pergola in the garden and taste the dishes you've just prepared, paired with wine and water. Tiramisu and espresso finish the lesson.
You leave with a printed recipe book containing every recipe you made together, with exact doses and ingredients, so the pasta you learned stays part of your cooking at home. Vegetarian, vegan, and gluten-free options are available if you let the chef know when you book. The class is private, so it's just you and the chef: no group, no schedule pressure, no watching from the sidelines.
