The experience
You arrive at a local home in Arezzo and spend the next three hours learning to cook the way a Tuscan family does. Your host (a Cesarine, part of Italy's network of home cooks who open their kitchens to travelers) teaches you to roll sfoglia (fresh pasta sheet) by hand, then shape two different pasta types: tortelli filled with bacon and potatoes, and tagliatelle. Between the pasta lessons, you'll also learn to make tiramisu. Everything happens in their home kitchen, not a commercial studio, and the instruction is in English or Italian depending on your preference.
Once the cooking is done, you sit down together to eat. The meal includes the two pasta dishes and tiramisu you just made, served with a selection of local wines, water and coffee. You start with an Italian aperitivo (prosecco and nibbles) before the class begins, so there's time to settle in and meet the other travelers in the group. The whole experience is built around tasting what you've prepared, not just watching someone else cook it.
The class meets either in the morning or the afternoon, so you can pick the slot that fits the rest of your day in Tuscany. Public transportation options are nearby if you need them to reach the home. Cesarine hosts cook only recipes from their own family cookbooks, so what you learn is tied to their regional tradition, not a generic menu designed for tourists.
