The experience

Three hours in a Cortona home means you arrive, warm up with prosecco and nibbles, then move straight into the work. Your host is a Cesarine (a professional home cook from the network that spans over 500 Italian cities), and they teach you their family recipes, starting with how to roll sfoglia (fresh pasta sheet) by hand. You'll make two pasta shapes: tagliolini and pappardelle, each one a different technique, so you leave knowing how to build both from scratch.

After the cooking comes the eating. Everything you made (both pastas and the tiramisu) gets plated and tasted together with local wines, water and coffee. A Cesarine kitchen is not a cooking school kitchen. It's where the host actually cooks for their own family, so the setup is real and the stories behind each dish come from their own table. You cook with other travelers, which means you're making new friends while you work, not just taking a class.

The home is in Cortona itself, and public transportation options are nearby if you need them. The class runs in English or Italian depending on who is in the group, so language is not a barrier to following along.

Top questions

What languages is the tour guided in?

Live guide in English and Italian.

Can children come?

Yes. Ticket types: Child (4 to 8 years); Infant (under 4): free.

What two pasta shapes do I learn to make in this class?

Tagliolini and pappardelle. You learn to roll the fresh pasta sheet by hand first, then shape each one differently, so you leave knowing two separate techniques.

Is the tiramisu made from scratch too, or is it a demonstration?

You make the tiramisu yourself as part of the hands-on class, the same way you do with the pasta. Everything you prepare gets tasted at the end with wine and coffee included.

How many people cook together in one class?

It's a small group class, so you cook alongside other travelers in the host's home kitchen. The exact group size varies by departure, but the Cesarine network keeps classes intimate enough that everyone gets hands-on time and personal attention from the host.

What is a Cesarine, and why does it matter for this class?

Cesarine means "home cook" in Italian. They are professional local hosts who open their own homes to travelers and teach recipes from their family cookbooks. The network has been running for years across Italy, so your host is experienced at teaching and welcoming groups into their kitchen.

Do I need any cooking experience to join this class?

No. The class teaches you how to roll and shape fresh pasta by hand from the start, so beginners learn the technique alongside anyone else. The host walks you through each step.

What happens if I have a dietary restriction or food allergy?

Contact the operator before booking to discuss your needs. The class centers on pasta and tiramisu made with traditional ingredients, so the host needs to know in advance if you have restrictions they need to plan around.
