The experience
You arrive at a Cesarina's home in Arezzo and take a workstation equipped with everything you need to make pasta by hand. The local cook walks you through three authentic regional recipes, showing you the techniques that separate a sheet of dough from the finished shape. Each participant works independently at their own station, so you're learning the method, not watching a demonstration. The cook reveals the tricks specific to each pasta type: how the thickness changes, how the edges fold, what the dough should feel like at each stage.
Once you've finished shaping, the pasta goes into the pot. You sit down to taste everything you've made, accompanied by a selection of local wines (red and white) chosen to go with the dishes. Water and coffee are included as well. The whole experience runs three hours, which gives you time to work without rushing and to linger over the meal.
The class is private, so it's just you and anyone in your party with the host. Cesarine are home cooks who open their own kitchens to travelers. They handle all the setup and cleanup. Public transportation is available nearby if you're traveling without a car. You can book either a morning or an afternoon slot depending on what fits the rest of your day in Arezzo.
