The experience
You'll spend three hours making pasta by hand: three different formats, each one paired with a sauce built on what's in season. Ravioli filled with fresh ricotta and spinach comes with brown butter and sage; tagliatelle gets the local version of ragout; spaghetti alla chitarra is dressed with basil pesto, pine nuts and cheese. The chef, a Tuscan born in Val d'Orcia with over 20 years in professional kitchens, walks you through every step and answers questions about the ingredients and the territory as you work.
At the end of the class you sit at the table and taste everything you've made, finishing with homemade tiramisu. The chef sources all ingredients from trusted local producers beforehand, so you're working with what the region actually grows. If you want wine pairings, he can suggest bottles from wineries around Montepulciano and Montalcino that you can purchase separately.
After the class ends, you'll receive a digital booklet with the recipes you prepared together, so the dishes travel home with you. The chef is happy to share advice about the area and recommend activities and places to visit during your stay in Tuscany.
