The experience
You start by learning to hand-roll two kinds of pasta typical to the region (tagliatelle or pappardelle) using traditional recipes and techniques the chef passes down from family generations. The same dough gets dressed two ways: one batch with tomato sauce, the other with meat sauce, both made in the restaurant's kitchen. Then the chef teaches you the secrets of cantucci, the hard almond biscuits that belong in Tuscan dessert.
After the lesson, you sit down to eat. Lunch includes two courses of the pasta you made with their two different sauces, plus the cantucci you baked for dessert. The meal happens either outside when weather allows, with views across Val d'Orcia, or in the historical dining room. Filtered water comes with the meal. Wine, beer and local artisanal sodas are sold separately on the property, starting at €4 for soda and €6 for beer, with local wine from €30 and up.
The property itself is part of the day. Podere Spedalone runs as a farm-to-table restaurant, so everything you cook with comes from the organic garden or nearby farms, picked for the season. Before and after the class, you have time to walk the grounds and take in the landscape. The space is wheelchair accessible, and the restaurant can provide specialized infant seats if you're traveling with small children.

Is this one for you?The chef leads the whole class, so you're learning directly from someone trained in the restaurant kitchen rather than watching a demonstration. If you want to come away knowing how to roll pasta by hand and recreate these dishes at home, the hands-on instruction and the lunch of your own creations make that possible in one morning.
