The experience
You arrive at a rustic farmhouse in the Val di Chiana countryside and begin with a welcome aperitif (chilled prosecco and traditional Tuscan crostini) in the garden. Then you move into the kitchen and roll up your sleeves. Your guide is a home cook from Cesarine, Italy's oldest network of passionate cooks who teach from their own tables. She walks you through making three iconic local pasta dishes: potato and pancetta tortelli folded by hand, egg tagliatelle cut to the right thickness, and pici (the hand-rolled cord pasta that defines the region) finished with a Valdichiana-style garlic sauce. You work with all the ingredients provided, learning not just the shapes but the regional traditions and the small moves that separate homemade from restaurant pasta.
The class runs three hours, and the sequence matters: you make the pasta first, then cook it together. By the time you sit down to eat, the dishes are yours: the tortelli you filled, the tagliatelle you cut, the pici you rolled. Wine from the region accompanies the meal, and your guide shares the stories behind each dish and the ingredients that make Tuscan cooking what it is. You leave with the techniques, the confidence to make these shapes at home, and the memory of tasting them fresh in the place they come from.
