You hike through forest to reach seven waterfalls at Damajagua, where you jump or slide down each cascade with a guide showing you the way. Water cascades down limestone cliffs in layers, each pool deeper and colder than the last. You're standing at the top of Damajagua Falls, about 35 minutes into a forest walk through dense vegetation, with a guide pointing out the route down. The choice is yours at each of the seven waterfalls: jump into the pool below or slide down the smooth rock face. It's the kind of thing that sounds scarier in your head than it is in the water, and your guide walks through every jump before you take it, so you're not guessing.
After you've dried off and changed, the tour shifts to Puerto Plata's colonial center. Fort San Felipe sits on the coast, built by the Spanish in the 16th century to keep pirates out—it's got original cannons still facing the Atlantic and a maze of chambers inside. The views from the fortress walls are the kind you actually remember. Then there's Umbrella Street, which is exactly what it sounds like: a pedestrian strip lined with bars and shops where locals and tourists mix, and the light through the umbrellas overhead is good for photos. Pink Street (Paseo de Doña Blanca) is nearby, a restored colonial promenade where the architecture is the whole point. You'll also stop at a cigar factory where you can watch hand-rolling and try rolling your own if you want, and there's a shop selling larimar and amber—the blue stone and the fossilized resin the island is known for.
The day runs long because of the travel between stops, but that's built into the schedule.
