You're back at the port with a few hours before the ship leaves, and the best move is to get out of the crowds. Meet your guide an hour after docking (timing that keeps you ahead of the rush), and head into the jungle for a moderate 30-minute walk. The path winds through tropical plants and mountain views, and by the time you reach waterfall number seven, you've already seen what most cruise passengers miss.
Then the day flips. You descend the canyon one waterfall at a time, and at each one you jump, slide or swim through pools of clear water. Helmets and life vests are provided. The waterfalls aren't a viewing platform. You're moving through them, choosing your own pace at each drop. Younger kids stay with the first waterfall while the rest of the group works through all seven, so families split naturally without anyone sitting out.
After the water, you head to the plantation for lunch: white rice with red beans, fried plantains, red sauce pasta, fried chicken, grilled pork and Dominican salads, plus beer and a shot of Mamajuana.
