The experience

Your guide meets you at your hotel in Cabarete and drives you 45 minutes into the mountains to the canyoning base camp, where you get suited up and briefed on safety and technique. A short 10-minute ride then takes you to the canyon entrance. Once inside, you spend two to three hours rappelling down rock faces, jumping off cliffs into pools, swimming through sections of the canyon and hiking over terrain. The Magic Mushroom waterfall, the signature stop, is a mushroom-shaped formation you rappel into a deep blue pool below. The canyon itself is rated V3 A4 II, which means it's suitable for beginners with reasonable fitness, though it does demand comfort in water and a fair amount of swimming.

After exiting the canyon, you hike out over 30 minutes and are driven back to base camp, where a Dominican-style lunch of rice, beans, chicken, vegetables and plantains waits, along with beverages and coffee or tea. Professional guides speak English, Spanish or German, and the operator includes bottled water throughout the day and free photos of your adventure.
