The experience
Start at Maruyama-koen station, where Kanae meets you and drives to the Sapporo Morning Market and the adjacent Jogai Market (closed Wednesdays and Sundays). You walk through the stalls with her, learning what is in season and what Hokkaido cooks buy for everyday meals, then pick out a few fresh ingredients to use in the cooking class. The markets sit next to Sapporo Central Wholesale Market, so you see the scale of what feeds the city.
After the market tour, a 15-minute drive takes you to Kanae's home, which overlooks the mountains. You step into her open kitchen and cook together for about an hour to an hour and a half. The menu shifts with the season: one option centers on teriyaki chicken, kinpira-gobo, agedashi tofu, pickled vegetables and miso soup. Another features Hokkaido specialties like soup curry, chan chan yaki, rice-stuffed squid and pork donburi. Kanae guides you through each step, and you eat what you've made together, with local alcohol included.
If your group has five or more people, you'll need to take a taxi from the station and follow Kanae's car to her home: her vehicle seats a maximum of four guests plus the driver. Infants and small children can come along in a pram or stroller. Public transportation is available nearby if you prefer to make your own way.
