The experience

Sapporo's class starts with a five-minute orientation on hygiene and the day's plan, then moves straight into ingredients and rice prep: the foundation of sushi. You'll spend eight minutes learning how temperature and seasoning affect the rice, then twenty-two minutes on nigiri itself: watching a demo, then making six pieces of your own. The instructor shows you the hand position, the pressure, and the feel of properly formed nigiri so you can judge it by touch, not just sight.

The decorative roll comes next, twenty minutes of filling layout and rolling technique. You'll learn how to cut cleanly and why the knife matters as much as the roll. After that, you taste what you've made (all six nigiri and the roll), and the instructor gives you key takeaways for home practice, answering questions about tools and technique. The whole class, including cleanup, runs seventy minutes.

The class uses market-fresh ingredients throughout and welcomes both first-timers and people who cook at home already. It's photo-worthy by design, and you leave with the skills to make sushi again without a recipe.
