The experience

You arrive at Sumikawa Station and Shiori meets you at the north exit. Her car takes you out of the city center into a quiet residential neighborhood where she lives: a shift from the busy streets into the everyday Sapporo most visitors don't see. Her newly-built home is where the class happens, and it's also where you'll eat afterward, so there's no moving between venues or waiting for a restaurant table.

The cooking portion lasts about an hour. Shiori walks you through making a main dish, typically a handmade sushi roll, and a side dish, using fresh seasonal Hokkaido ingredients. She preps the vegetables in advance so you focus on the technique and assembly. You work alongside her, learning the cuts and folds that go into dishes that look simple but take practice. The menu shifts with the season but usually includes items like somen noodles, grilled chicken and vegetables, nimono of fish cakes, or a vegan nikujaga if that's what you've ordered.

Once the cooking is done, you sit down to eat everything you've made, beautifully plated and ready to taste. The meal includes one to two glasses of local alcohol. This isn't a formal lesson followed by dismissal. It's a shared table in someone's home, which is the point of the whole experience. You can ask questions about ingredients, techniques, or life in Sapporo while you eat. The class wraps up after three hours total.
