The Experience

One of them will guide you through the whole process: mixing buckwheat flour and wheat from Hokkaido with water, kneading the dough until it comes together, stretching it thin, and cutting it into noodles by hand using the same tools they use every day. The demonstration happens in the working environment, so you see how soba-making fits into the rhythm of a real shop.
After about 30 minutes of hands-on work, you sit down to taste your own noodles. The restaurant serves them with both cold and warm sauce, along with condiments and a small cup of sobayu — the water the noodles cooked in, a traditional part of the meal. The whole experience, from first flour to last bite, takes around an hour.
