The experience
You arrive at a real soba restaurant in Sapporo, not a tourism facility. The soba chefs who make and serve noodles daily give you direct instruction as you work through the complete process: mixing buckwheat flour, pulling the dough together, stretching it, and cutting it into noodles. This is the same sequence Japanese people follow when they make soba at home, so you learn the craft as it is actually practiced, not a simplified version.
Once you finish cutting, the chefs boil your noodles and serve them immediately: the only time soba tastes completely different from restaurant versions, with an aroma and texture that fade within minutes. You eat your own work at its peak. Alongside the noodles comes tempura made by Japanese food artisans from seasonal Hokkaido ingredients, chosen to pair with soba rather than stand alone. The sake arrives in three forms: two chilled varieties and one warmed, all selected by a sake master from Hokkaido producers. Tasting them side by side shows how temperature changes the aroma and flavor, and how sake is meant to be eaten with food, not drunk alone.
The experience is private and kept to a small group, so you stay close to the craftspeople and work in a calm space. You also learn the Japanese ways to eat soba: using the warm broth, adding tenkasu (crispy bits), and the sake selections are chosen to be approachable for people new to it.

Top questions
What languages is the tour guided in?
Live guide in English and Japanese.
Can I make the soba noodles myself, or do I just watch?
You do the full soba-making process yourself under the chef's guidance: you mix the buckwheat flour, knead and stretch the dough, and cut the noodles. The tempura is made by the Japanese chef for safety reasons, but you handle every step of the soba.
What is the difference between the three sake you'll taste?
The sake master selects two chilled varieties and one warmed sake from Hokkaido producers. Tasting them at different temperatures shows how the aroma and flavor change, and each is paired to complement the soba and tempura rather than stand alone.
Is this experience suitable if I've never made soba or tried sake before?
Yes. The chefs teach the entire soba process from the start, and the sake selections are chosen to be easy to drink for people new to it. The experience is designed to introduce both soba and sake culture, not assume prior knowledge.
How long does the whole experience take?
The experience runs about 75 minutes, from the time you arrive through finishing your meal of fresh soba, tempura and sake.
What happens if I have dietary restrictions or allergies?
Contact the operator before booking to discuss your needs. The tempura uses seasonal Hokkaido ingredients and the soba is made from buckwheat flour, so advance notice helps them prepare alternatives if needed.
