The experience
You'll spend three hours making two desserts from the ground up. The class starts with tiramisu: layering mascarpone, eggs, espresso and ladyfingers into the creamy, coffee-soaked classic. Then you move to almond cantucci, the twice-baked biscuit that cracks between your teeth. An Italian chef walks you through each step, and the recipes are straightforward enough for beginners and children to follow. The ingredients are all there (high-quality eggs, mascarpone, almonds, espresso), so you're not hunting or substituting.
While your desserts set, a wine expert takes over. You taste five wines from the Chianti region: Arella and Firmina spumantes to start, then three reds. Lucilla Chianti Classico, Oletta Chianti Riserva, and Aranda Supertuscan. The expert explains how wine fits into Tuscan life and what makes each bottle different. This is not a rushed tasting. There is time to sit with each glass and ask questions.
At the end, you eat. The tiramisu you made comes to the table, still cool from resting. The cantucci are served with Vinsanto, the sweet wine Tuscans drink with them. You leave with the recipes written down so you can make both desserts at home, and with the memory of an afternoon spent making something with your hands in a place where that still matters.
