The experience
The class starts with freshly brewed coffee and an extra virgin olive oil tasting, where a sommelier walks you through the secrets of high-quality, artisanal oils. You'll learn how to pair wines and oils like a connoisseur before you ever touch the dough. Then you roll up your sleeves: you make handmade tagliatelle with ragout, spaghetti alla chitarra with a sauce you choose and prepare together, ravioli filled with Pienza cheese and vegetables, and finish with tiramisu. Every ingredient is organic and sourced farm-to-table, and every dish comes together under expert guidance.
The class runs three hours, and the last part of it is sitting down together to eat what you've made, with local wine for adults and soft drinks for kids. We prepare extra portions so you can bring home a taste of your Tuscan cooking experience to share with people at home. The palazzo itself is historical, and the sommelier leading the class is certified in wine and olive oil, not just someone teaching recipes, but someone who knows the why behind each pairing and technique.
