The experience
You start by learning how to mix and knead fresh pasta dough, then roll it by hand into two traditional Tuscan shapes: Tagliatelle and Pici. The chef shows you how to finish each one with authentic local sauces. This is not a demonstration you watch from a stool. You're working the dough yourself, getting the feel of when it's ready and how it behaves under your hands.
Once the pasta is done, a wine expert takes over and teaches you the basics of tasting. Five wines come out: Arella and Firmina sparkling wines, then three reds. Lucilla Chianti Classico DOCG 2022, Oletta Chianti Riserva DOCG, and Aranda Supertuscan IGT. Each one is tasted alongside balsamic vinegars (including a Tuscan onion vinegar) and three extra virgin olive oils, so you see how the region's products layer together. The tasting is not a lecture. It's built around what you're tasting and how it works.
Lunch arrives as a three-course meal: appetizers of Tuscan salame, finocchiona, prosciutto crudo, pecorino, bruschetta and toasted bread with olive oil; then the Tagliatelle and Pici you made, served with traditional sauces; then Tagliata di manzo with roasted potatoes; and Cantucci biscuits with Vinsanto wine to finish. Bottled water is included throughout.
