The experience

The class starts with prosecco and a chef's hat and apron, then moves straight into making pasta. You'll shape gnocchi, pici and tortelli by hand, learning the tricks that separate homemade from store-bought. The chefs reveal how to build three seasonal sauces to match each pasta, then move to a beef main course with rosemary potatoes. The day ends with tiramisu, the one dish that closes every Tuscan meal the same way.

The kitchen sits a few steps from Piazza del Campo in Siena's medieval core, so the location itself is part of what you're there for. The academy sources ingredients from the territory: many zero-kilometer, meaning they come from nearby farms and producers. That specificity matters: you're not learning Tuscan cooking in the abstract, but the cooking of this place, with the ingredients that define it.

After you finish cooking, you taste everything you made. A 500 ml pour of Rosso Toscano IGT opens the meal, followed by Chianti Classico, Nobile di Montepulciano and Brunello di Montalcino as you work through the courses. The wines are chosen to match what's on your plate, not to showcase the vineyard. Minors under 18 receive soft drinks instead of wine, so families with younger teens can still book together.
