The experience
The class starts with prosecco and a chef's hat, then moves straight to the counter. You'll learn to roll three fresh pastas by hand (the chef walks through the traditional techniques and the seasonal sauces that go with each one), then move on to peposo, a slow-cooked Tuscan beef stew, and finish with tiramisu. The ingredients are sourced locally, many from within the region. You work at your own station, so there's room to ask questions and move at your own pace as the chef circulates.
After the cooking wraps, you sit down to eat everything you've made. The meal comes with three Tuscan wines: a local red IGT, Chianti Classico and Nobile di Montepulciano. The academy sits a few steps from Piazza del Campo, tucked into the medieval streets, so the setting itself is part of what you're there for. You'll share the experience with other travelers, which means the group stays small enough that the chef can actually teach.
The whole thing (cooking, eating, tasting) takes about three hours. Public transportation stops nearby, and the space is wheelchair accessible. If you're gluten intolerant or vegetarian, let them know when you book and they'll adjust the menu.

Top questions
What languages is the tour guided in?
Live guide in English and Italian.
What exactly do I make in the cooking class?
You prepare three fresh pastas with seasonal sauces, peposo (a traditional Tuscan beef stew), and tiramisu. The chef demonstrates each dish and guides you through the techniques, then you eat everything you've made at the end of the class.
Is the class suitable for someone who has never cooked before?
Yes. The chef teaches the traditional techniques from the start, and you work at your own station so the pace is yours. The focus is on learning how to make these dishes, not on prior experience.
What wines do I taste, and how much do I get to drink?
You taste three Tuscan wines (a red IGT, Chianti Classico, and Nobile di Montepulciano) paired with the meal you've cooked. You also start with a glass of prosecco. Alcoholic beverages are served only to travelers 18 and older. Younger participants receive soft drinks instead.
Can I do this class if I'm vegetarian or have a gluten intolerance?
Yes. The academy can adjust the menu for vegetarian diets and gluten intolerance if you let them know when you book. Let them know your dietary needs ahead of time so they can prepare.
