The Experience

You're standing in a countryside farmhouse outside Siena, and the chef is already moving—hands shaping dough, the pasta board dusted with flour. This is a 4-hour Tuscan cooking class, and you're about to learn how to make the things you've been eating in restaurants for years, except here you're doing it yourself, in a professional kitchen with maybe six other people, all of you a little nervous and then suddenly laughing when someone's ravioli tears open. The chef speaks English and Italian and moves between both without breaking rhythm, correcting your hand position on the rolling pin, showing you the exact thickness the pasta needs to be.

You'll start with bruschetta—tomatoes, basil, Tuscan bread, good olive oil—which sounds simple until you realize the tomatoes have to be cut a certain way and the bread has to be toasted just enough. Then comes the pasta. Depending on what the chef decides that day, you might make pici (thick, hand-rolled noodles), ravioli, tagliatelle, or something else entirely. The sauce changes too—sometimes it's ragù, sometimes tomato and sage, sometimes cheese-based. You're not watching a demo; you're at the counter doing it, your hands in the dough, the chef correcting you, the other people in the class occasionally catching your eye when something goes wrong in a way that's funny. After the pasta comes a fresh dessert, usually tiramisù, which you also make from scratch.
