The Experience

You arrive at Cortecorbo Winery, a boutique organic vineyard set in the rolling countryside of Irpinia, one of Southern Italy's most important wine regions. A local winemaker greets you and walks you through the vineyards and cellar, explaining the traditional techniques that shape the wines here. The tour is unhurried—this is a family operation, not a commercial stop—and you get a real sense of how the place works before you move into the kitchen.

Then you cook. You choose either a wood-fired pizza class or a class in making ravioli and tiramisù from scratch, working alongside someone from the winery who shows you how Italians prepare these dishes at home. The kitchen is set up for hands-on work, not demonstration; you handle the dough, shape the pasta, build the layers. The wood-fired oven is the real thing—not a prop—and you finish what you made yourself.
