Roll pasta dough and taste what you make, then walk into a vinegar cellar where decades age in wood.

A private cooking class in Modena where you make two kinds of fresh pasta by hand (tortellini, tortelloni and tagliatelle), then visit the Malagoli Daniele family's balsamic vinegar cellar to taste their traditional vinegars before lunch. The class runs about five and a half hours and includes the cooking instruction, the cellar tour with tastings, snacks, and a meal built from what you prepared. A guide speaks English or Italian. Private transportation can be arranged at checkout.

The Experience

You start in the green of the Emilian countryside at a family home, where the hostess walks you through making pasta dough from scratch. You'll roll it by hand with a rolling pin and shape two different kinds (tortellini and tortelloni, or tagliatelle) the way they're made in Modena. The dough stays simple. The work is in the shaping, and by the end of the session you'll have made enough to eat.

Then you cross into the balsamic vinegar cellar, where the Malagoli Daniele family keeps their barrels. You'll taste their traditional balsamic vinegars at different ages, each one darker and more concentrated than the last. The cellar itself is part of the experience: the wood, the time, the way the vinegar changes sitting in it. After the tasting, you sit down to lunch with the pasta you made, a traditional Modena dessert, and time to eat without rushing.

The whole place is wheelchair accessible, and all surfaces and areas are set up for it. If you're traveling with infants or small children, you can bring a pram or stroller. Transportation to the countryside location can be private if you arrange it when you book.
