Taste balsamic vinegar at five different ages, straight from the barrels where it's been aging for generations

A 2-hour tasting at Acetaia Malagoli Daniele, a family-run vinegar house in the Modena countryside, where a live English-speaking guide walks you through the production and aging of Traditional Balsamic Vinegar of Modena DOP. You'll sample five vintages, balsamic pearls, saba and wine vinegar, starting with espresso, tea and homemade cake. The acetaia sits on the top floor of the family home between Modena and Bologna, surrounded by ancient wooden barrels.

Visit traditional balsamic vinegar house

  • Arrive at family-run vinegar house
  • Learn about vinegar making process
  • Discover traditions and uses
  • Taste different aged balsamic vinegars

The experience

Two hours at Acetaia Malagoli Daniele means you spend the morning or afternoon in a working vinegar house, not a museum. The Malagoli family runs the place themselves and guides you through the rooms where balsamic ages in wooden barrels stacked floor to ceiling. You'll learn why the process takes decades: how the vinegar moves between different woods, how the climate of Emilia-Romagna shapes the flavor, and why Modena's version tastes nothing like the commercial balsamic most people know.

The tasting starts with an espresso, tea and a slice of homemade cake, then moves into the five different ages of Traditional Balsamic Vinegar of Modena DOP. Each one tastes different: younger versions are sharper, older ones are thick and almost syrupy, with a depth that builds on your palate. You'll also taste balsamic pearls (tiny spheres that burst), saba (a grape must reduction), and a wine vinegar to understand how the family's other products fit into the tradition. Bottled water and snacks are included throughout.

The acetaia is wheelchair accessible, and all surfaces are accessible too. The location is in the countryside between Modena and Bologna, so you'll need your own car to get there. If you don't have one, the family can arrange a transfer for an additional cost, but you need to ask in advance. Wear comfortable shoes. The tour involves walking between barrel rooms and the floors aren't flat.
