Inside a 160-Year-Old Vinegar Factory, Tasting Balsamic That's Older Than Your Grandparents

You walk through vineyards and a working acetaia dating to 1860, then taste eight balsamic vinegars ranging from five to over one hundred years old, paired with local cheeses, cured meats, and Lambrusco wine made on-site. The owner leads the tour in English or Italian and stays with you through the tasting. You'll need to arrange a taxi from Modena (45 minutes) or Bologna (70 minutes), or book one from the nearby Vignola train station in advance.

The Experience

You arrive at Acetaia Cavedoni expecting to taste vinegar. What you actually walk into is a wooden cathedral — rows of barrels stacked in the dark, each one holding liquid that's been aging since before your family moved to wherever they moved to. The owner meets you in the vineyard first, pointing out the Trebbiano grapes that start the whole process, and then takes you through the pressing room, the boiling vats, the filtration tanks, the slow transformation from grape juice into something that tastes like time itself. It's a lot to hold in your head at once, but that's kind of the point.

The tasting happens in stages, which is how you realize there's a difference between balsamic vinegar and balsamic vinegar. You start with the young stuff — five years old, bright and sharp, meant for salads and raw vegetables. Then you move through the middle years, the ones that go on meat and fish. And then you hit the old ones. The 12-year-old tastes like caramel and leather. The 25-year-old tastes like time has a flavor. By the time you're at the 100-year-old reserve — and yes, you taste it — you're not tasting vinegar anymore, you're tasting the family's entire history in one spoon. Eight different ages, eight different moments of patience.

After the tasting comes the food. Parmigiano Reggiano, prosciutto, mortadella, salame, and bread from the region, all meant to sit alongside the vinegars you've just tasted. A bottle of Grasparossa Lambrusco — made on the property — arrives to drink with it. The owner stays with you through the meal, answering questions about why the barrels are different sizes, why some vinegars are darker than others, why his family decided 160 years ago that this was worth doing. You can buy bottles to take home if something spoke to you, though after tasting the 100-year-old, everything else feels like a souvenir of a souvenir.

Getting there takes planning. From Modena, a taxi runs about 45 euros and takes 45 minutes. From Bologna, it's around 70 euros. The train station at Vignola is 7 kilometers away and a 20-euro taxi ride, but you have to book that taxi in advance — there aren't cabs waiting at the platform. The owner or the company can help arrange the return trip. Plan to arrive around 3pm, which is when the tour starts.
