The morning starts with pickup in an air-conditioned vehicle and a drive to a working Parmigiano Reggiano dairy. You walk through the production floor where curds are cut and heated in copper vats, then into the aging rooms stacked with wheels of cheese. The guide explains how long each wheel has been aging—some for two years, some for three—and you taste the difference: younger cheese is softer and milder, older wheels are crystalline and sharp. Ricotta samples come at the end, still warm from the whey.

The second stop is an acetaia, the traditional workshop where balsamic vinegar of Modena ferments in wooden barrels stacked floor to ceiling. You taste vinegars that are 12, 25, and 40 years old—each one thicker and more complex than the last—and the guide shows you how to use them: a few drops on Parmigiano, a splash in a pan of onions, a drizzle over strawberries. The recipes are simple and the vinegars are the point.

The final stop sits on a hilltop with views across the vineyards. You visit the cellar, then move to a tasting room where three wines arrive with local snacks: two Pignoletto whites and a Lambrusco red, all from the region. The guide pours and talks through each one while you sit and eat. The tour ends here, and the driver takes you back to your hotel or starting point.
