You roll the pasta dough yourself, then eat what you made.
A small-group cooking class in Modena where you learn to roll fresh pasta by hand and make two pasta dishes and tiramisu from scratch in a Cesarina's home. The class runs three hours, includes an Italian aperitivo, wine, and coffee, and caps at twelve people so you cook alongside other travelers rather than watch a demonstration. You choose lunch or dinner after class.
The Experience
Modena's Cesarine are home cooks who open their kitchens to teach you how they cook. You'll learn to roll 'sfoglia' (the thin, fresh pasta sheet) by hand, then shape it into two different pasta types using techniques the host has used for years. After the pasta, you move on to tiramisu, the layered dessert that shows up on every Italian menu. Everything you make, you taste: the class ends with you eating the pasta and tiramisu you've just prepared, alongside wine and coffee.
The class runs three hours in the host's own home, not a cooking school or a restaurant kitchen. You start with an Italian aperitivo (prosecco and nibbles) to settle in, then move straight to the counter. A maximum of twelve people means you're not crowded, and you're not watching from a stool while someone else cooks. You get your hands in the dough. The Cesarina speaks English or Italian depending on the group, and she'll walk you through each step. Water, wine and coffee flow throughout, and all the ingredients are provided.
You'll need to choose whether you want lunch or dinner after the class when you book. Public transportation runs near the home, so you can reach it without a car.

Is this one for you?The hands-on format means you're rolling dough and layering tiramisu yourself, not watching a chef demonstrate, so if you want to leave knowing how to make these dishes at home, this is the setup that teaches it.
