You hand-craft 24 Mozart Kugels from hazelnut core through chocolate coating, tasting Maria Antonietta's Orange Hot Chocolate midway. All tools, aprons, and equipment are provided; you take home everything you make. The workshop happens inside Vienna's chocolate museum, with nearby public transport access.
The chocolate is already melting in the tempering machine when you walk in, and your chocolatier is laying out the hazelnut paste, pistachio powder, and marzipan sheets on the work station. You tie on an apron, wash your hands, and then you're blending the roasted hazelnuts into a smooth core — it's stickier than you'd expect, and your hands warm it as you work. The whole thing takes focus, but not in a tense way. Around you, other people are doing the same thing, and nobody's rushing.
Once the hazelnut core is shaped and cooled slightly, you wrap it in pistachio-colored marzipan, then dip the whole thing into melted marzipan again to seal it. The smell at this point is almost overwhelming — sweet, nutty, a little floral. Then comes the choice: milk, white, or dark chocolate for the final coating. You dip it, let the excess run off, and set it on parchment to harden. By the time you've finished your first one, you're already thinking about the next batch differently — your hands know the rhythm now, and the second one comes together faster. You make 24 total, which sounds like a lot until you realize you're taking them home.
Halfway through, there's a break for Maria Antonietta's Orange Hot Chocolate — a warm, spiced drink that tastes like someone took the idea of hot chocolate seriously about two hundred years ago and never looked back. It's made with traditional tools right there in front of you, and you get to taste it while your Mozart Kugels are setting. The orange cuts through the richness in a way that makes sense once you've tasted it, and it's the kind of thing you'll want to recreate at home and probably won't quite manage.
The workshop runs in the chocolate museum itself, so there's no separate trip — you're already there, and the whole thing, from apron to wrapped box of finished Kugels, takes a couple of hours. Lockers are available for jackets and bags, and public transport stops are nearby if you're coming from central Vienna. The tools and equipment stay with the museum, but the 24 chocolates you made are yours to carry out.
