The experience
The class starts with pickup from your hotel within 3 km of downtown Chiang Mai, then moves to a local market where you'll see how Thai cooks actually shop. You walk the stalls, learn what herbs and spices go into the dishes you're about to make, and pick some of the fresh ingredients yourself. This isn't a quick stop: the market tour teaches you Thai culinary traditions while you're gathering what you need.
Then you move to the organic farm kitchen, an open-air setup surrounded by the vegetables, herbs and fruits you'll be cooking with. An experienced Thai chef walks you through six dishes across six categories: stir-fries like Pad Thai or Hot Basil Stir Fried, soups including Tom Yum and Coconut Milk Soup, curry pastes (Red, Green, Massaman, Panang or Khaw Soi), finished curries, a dessert like Deep Fried Banana or Sticky Rice with Mango, and a salad. You get your own cooking station and all the ingredients. The instructor shows you how to handle the herbs, spices and techniques that make Thai food work. You also learn how to cook sticky rice, which shows up in multiple dishes. Each person chooses their own menu, so vegetarian, vegan, spicy and non-spicy preferences all get their own versions.
After cooking, you eat in a locally styled bamboo hut on the farm. The meal is what you made. You'll get fresh coffee and herbal drinks, a welcome snack or seasonal fruit, and a recipe book to take home so you can keep cooking Thai food after you leave. A daily photo album goes up on Facebook. Transport back to your hotel is included.

Is this one for you?Book the town option if your hotel is downtown and you prefer a shorter travel time. Choose the farm option if you want to spend more time on the organic farm itself and don't mind the longer pickup window. Both teach the same six dishes and include the market tour. The difference is where the kitchen is located and how much of the day you spend on the farm grounds.
