The Experience
We hopped into the van just after breakfast—still a bit sleepy, honestly—and headed straight for a local Chiang Mai market. The air was thick with the smell of lemongrass and fried something (never figured out what). Our guide, Nok, handed me a tiny bitter green I’d never seen before. She grinned and said, “Try it!” It was sharp, almost citrusy, and I couldn’t help but laugh at my own face. The market buzzed with chatter and clinking coins—everyone seemed to know Nok, which made us feel like we belonged there for a minute.
After picking up our ingredients, we drove out to the cooking class in an open-air kitchen surrounded by this wild tangle of herbs and vegetables. There were butterflies everywhere—one landed on my sleeve while I tried (badly) to pronounce “kaffir lime.” Each of us got our own station and could pick our own menu. I went for green curry because I thought it’d be easy (it wasn’t). Making curry paste from scratch is no joke; my arms still remember that pounding. Nok kept things light—she teased me when my chili count was way too cautious.
The best part? Eating what we cooked right there in the garden, with everyone passing around plates family-style. Sticky rice with mango tasted even sweeter after all that chopping and sweating. There was this moment where everything went quiet except for birds somewhere nearby—I still think about that pause sometimes. We left full (maybe too full) and with a PDF recipe book so I could try again at home… though without Nok’s jokes it won’t be quite the same.
