The Experience
“Don’t pick that chili unless you want to cry,” our instructor Tee grinned, holding up something that looked harmless but apparently isn’t. We’d just stepped into Kom Market in Chiang Mai, and the air was thick with lemongrass and something frying somewhere — maybe banana fritters? I tried to pronounce ‘khao soi’ properly (Li laughed when I tried it in Mandarin — probably butchered it), but Tee didn’t mind. She just handed me a bunch of holy basil, still damp from the morning mist.
The half day evening cooking class started right after we picked out ingredients — honestly, I never realized how many types of eggplant there are until Tee lined them up for us. The kitchen was open-air, fans humming quietly above each wok. Everyone got their own station (no fighting over burners), which felt strangely empowering for someone whose most-cooked meal is instant noodles. There was this moment when the garlic hit the oil and everyone went silent for a second — like we all knew something good was about to happen.
Tee moved around, correcting my grip on the pestle (“not too hard!”) and showing us how to coax flavor out of kaffir lime leaves without tearing them to bits. She answered every question, even the silly ones (“Is fish sauce supposed to smell like that?”). We laughed more than I expected. And then we ate what we made — sitting together while dusk crept in outside, tasting dishes I didn’t think I could pull off. The rice was sticky in my fingers; the curry had this gentle heat that lingered just enough.
I still think about that first bite of pad thai — not perfect, but mine. Maybe it was the market smells clinging to my shirt or just being surrounded by people who were as lost as me in the beginning. Either way, leaving with a recipe book felt like getting a small piece of Chiang Mai to take home.
