The Experience
The moment you step into Norcineria Iacozzilli in Trastevere, you're standing where Romans have shopped for generations. Your guide is already there, pointing out which eggs, which Parmigiano, which sheep ricotta will go into what you'll make in a few hours. You taste the porchetta on pizza bianca — crisp, salty, the kind of thing that makes you understand why people have opinions about food — and a glass of wine while the guide talks through the day.
