The experience
You arrive and start cooking right away. The chef walks you through making one of five pasta styles (lasagna, tagliatelle, ravioli, spaghetti alla chitarra or hand-rolled pici) depending on which menu you've chosen (classic, Tuscan, vegetarian, or fish). You work with your hands, learning the proportions and the feel of the dough, then move into sauces: ragù Bolognese, pesto, or aglio e olio. The instruction is in English, and the pace is built for people who have never cooked Italian food before.
After the cooking session, you move to the table. Prosecco arrives with appetizers, then the four courses you've made come out: your pasta course, a main (chicken with green olives, guinea fowl, saltimbocca, or fish depending on your menu), a vegetable or starch course, and dessert. The wines are selected from the region. Coffee follows. This is not a tasting tour where you watch a chef work. You are the one holding the knife and tasting what you've built.
Between courses or after lunch, you visit the cellars of Ugo Bing Winery to see how the wines you're drinking are made, then descend into the Etruscan granaries: underground chambers carved two and a half millennia ago and still intact beneath the Chianti hills. The whole day runs four hours. Public transport reaches the location, or you can arrange a pickup. Let the operator know at booking if you need one.

Is this one for you?Book this if you want to actually cook, not watch. You're the one at the counter making the pasta and the sauce, and you eat what you've made. The small group size (maximum twelve) means the chef can watch your technique and adjust it. If you need transport to the location, arrange it at checkout. It's not included in every option.
