The experience
You arrive at Casalchino, a historic rural estate surrounded by vineyards and cypress trees, with views opening across the Val d'Elsa toward the Chianti hills. The class runs three hours and stays under six people, so there's room to move and ask questions without feeling rushed. Massimo, a sommelier and local cooking host, leads the session in English or Italian: whichever suits your group.
You'll make bruschetta with fresh tomatoes and basil, handmade egg tagliatelle using local and seasonal ingredients, a Tuscan sauce, and tiramisu. The kitchen is set up so you're working with your hands, not watching a demonstration. You learn the techniques as you go: how the dough comes together, how to roll and cut the pasta, what the local traditions are. The ingredients and extra virgin olive oil are provided.
When the cooking is done, everyone gathers around the table for a shared lunch. The dishes you prepared come out with local wines (Vernaccia di San Gimignano or Chianti Colli Senesi) plus water and coffee. You eat in the panoramic setting of the estate, looking out over the countryside you just cooked in.
