The experience
The class starts with hands-on instruction in English as you work through the fundamentals of Italian cuisine. You'll make your choice from five menu tracks (homemade pasta dishes like lasagna or tagliatelle with ragù, risotto milanese, gnocchi, saltimbocca, or seafood options with squid ink), and the chef walks you through each step. Vegetarian and dietary alternatives are available if you request them when booking. After about two hours of cooking, you sit down to eat the dishes you've prepared, paired with Prosecco and Chianti wines selected to match the meal.
The winery visit happens next: you walk into the cellars of Ugo Bing to taste the wines that accompanied lunch or dinner. Then comes the surprise element most visitors don't expect: a descent into the underground Etruscan granaries, stone chambers carved into the earth around 500 BC. The whole experience runs roughly four hours from start to finish. A minimum of two people per booking is required, and a maximum of twelve keeps the class intimate enough for the chef to give real attention to each cook.

Top questions
What languages is the tour guided in?
Live guide in English, German, Italian and Russian.
Can children come?
Yes. Ticket types: Child (3 to 14 years). Children under 3 can't be included in the booking.
What dishes can I choose to cook in the Chianti class?
Five menu tracks are available: homemade pasta including lasagna, tagliatelle with ragù bolognese, and spaghetti alla chitarra; vegetarian options like risotto milanese and parmigiana; classic Italian dishes such as gnocchi and saltimbocca; Tuscan specialties including pici all'aglione and chicken with green olives; and seafood preparations with squid ink or swordfish. You pick your track when you book, and the chef guides you through the full preparation.
Are the wines included in the price, or do I pay extra for the tasting?
Selected wines are included: Prosecco and Chianti served with the meal you cook, plus tastings in the Ugo Bing cellars. No additional wine charge.
What happens during the visit to the Etruscan granaries?
You descend into underground stone chambers built around 500 BC to store grain. The granaries are carved directly into the earth and offer a glimpse into daily life in ancient Etruscan times. Kids often find this part especially memorable.
Do I need cooking experience to join the class?
No. The chef teaches the basics of Italian cuisine from the start, so beginners and experienced cooks both work through the same instruction. The focus is on learning the fundamental techniques, not on prior skill.
