A truffle hunting and cooking class on a working farm in Colle Val d'Elsa combines three hours of foraging in the woods with a trained dog, hands-on pasta and dessert preparation in the farm kitchen, and a complete meal featuring the truffles you found, handmade tagliolini, antipasto, wine and oil from the estate. The experience

The morning or afternoon starts in the woods with the farm's truffle expert and his dog. You walk the estate's land while the dog hunts. The expert explains what to look for and how the dog signals a find. Truffles come out of the ground, and you move on to the next spot. This is not a guided walk. You're actively searching, watching the dog work, and learning what makes a truffle worth finding. An English-speaking sommelier joins the group to talk through the hunt and the farm's approach to the land.

Back at the farm kitchen, you cook with the house cook. The class focuses on tagliolini (handmade pasta, the thin Tuscan kind) dressed with the truffles you just found. You also prepare a dessert, typically tiramisù or another Italian specialty, depending on the day. This is instruction with your hands in the work: rolling, cutting, tasting as you go. The cook guides you through each step and explains the traditional methods.

The meal comes next: a full spread of Tuscan antipasto, the tagliolini you made, the dessert you prepared, plus wine and olive oil from the farm to taste. You sit down to eat what you hunted and cooked. The whole experience runs about three hours. Wear comfortable shoes and clothes you don't mind getting dirty. Food allergies or restrictions must be communicated when you book so the cook can plan accordingly.
