The experience
The class starts with the family's story and how they farm. Then you move into the kitchen to make two kinds of handmade vegan pasta from scratch, learning the shapes and the sauces that go with them. You'll also prepare crispy vegan bruschetta and a vegan cake, working through each dish before you sit down to eat it all together.
The tasting runs alongside the meal: four organic and biodynamic wines, six extra-virgin olive oils, and three balsamic vinegars, all from the farm. Everything is plant-based, and the recipes come from Tuscan peasant cooking: the kind that fed families for generations before "vegan" was a word for it. If you have specific dietary needs beyond the vegan base, let the operator know when you book.
The whole experience takes three hours. A live guide leads the class in English or Italian. Bottled water is included, and the meal and wine tasting are part of the price.
