The experience
You make three pastas in this class, each one a different technique. Tagliatelle starts with eggs and semolina flour mixed into a dough you'll roll thin and cut into ribbons. Pici, a Sienese specialty, is thicker and hand-rolled from just flour, water and olive oil: the kind of rustic pasta that takes practice to shape evenly. Ravioli comes last, filled with ricotta and spinach, seasoned with nutmeg, and you'll see how the edges seal. The class runs two hours and takes place at a charming local vineyard overlooking the Tuscan hills.
After you finish cooking, you sit down to eat what you made. The tagliatelle comes first, followed by the pici, then your ravioli with tomato sauce. A housemade dessert paired with dessert wine closes the meal. Between courses, the winery pours tastings of its own wines, olive oils and aged balsamic vinegar: the flavors that anchor Tuscan cooking. A live guide in English walks you through each pasta and explains the recipes as you work.
The class is wheelchair accessible, and all areas and surfaces accommodate mobility needs. If you have dietary restrictions, let the organizers know in advance and they'll adapt the menu to fit your needs.
