The Experience

The tasting opens with five wines from the operator's own range, each one chosen to show you the differences between Chablis and Auxerrois. A gougère—the cheese-filled pastry that is a Burgundy staple—arrives fresh from an artisan baker and sits alongside the glasses. The guide is a winemaker who knows the vineyards firsthand, and the point is not to rush through them but to understand what makes each one distinct: the soil, the grape variety, the way the season shaped the harvest.

The class runs 45 minutes, which is enough time to move through the wines without the tasting becoming a blur.
