The experience
How do you turn a papaya or a watermelon into something that looks like it belongs on a restaurant plate? The class starts with hotel pickup at 7am and runs until 11am, giving you the rest of the day free. At Sukho Cuisine, the chef teaches you the proper grip and technique for the carving tools, how to pick fruit that will hold detail, and the care needed to keep your work from browning or wilting. The method dates back to the Sukhothai dynasty in the 14th century and is still central to Thai food presentation. Something you'll see immediately when you plate your own carved pieces.
You work through the morning in a group of no more than 12, which means the chef can watch your hands and correct your angle or pressure. If you already carve at a basic level, let them know beforehand and they'll move you into more complex designs instead of starting from the beginning. By 10:30am you'll have finished your pieces, decorated a plate with them, and received a certificate. The class includes a welcome drink, Thai traditional snacks, and fruit you've carved to take with you.

Top questions
Can children come?
Yes. Ticket types: Child (9 to 11 years). Under 9: they can't be included in the booking.
What happens if it rains?
It may be canceled due to bad weather. If that happens, you're offered another date or a refund. Free cancellation up to 24h before the start.
What exactly do I learn to carve in the four hours?
The chef teaches you the equipment (which tools do what and how to hold them safely), then moves into basic fruit and vegetable carving techniques. You'll practice on real produce, learning how to select fruit firm enough to hold detail and how to make cuts that don't bruise or split. If you arrive with some carving experience, the chef will skip the basics and teach you more advanced designs instead.
Do I need to have done this before, or is it okay if I've never carved anything?
No experience is necessary. The class is built for people starting from scratch, and the chef teaches the fundamentals of grip, angle and pressure. If you do have prior carving knowledge, mention it when you book so the instructor can adjust the level to keep you challenged.
What time does the class start and end, and does pickup happen from my hotel?
Pickup begins at 7am from your hotel or a meeting point in Koh Lanta, and you arrive at Sukho Cuisine by 8am. The class runs until 10:30am, with return to your hotel by 11am. The pickup and drop-off are included in the price.
What do I get to take home?
You receive a certificate of completion, the fruit and vegetables you've carved during the class, a welcome drink, and Thai traditional snacks. The carved pieces are yours to keep or eat.
