The experience
The class runs four hours in the morning (starting at 9:30am with hotel pickup) or the afternoon (starting at 3:30pm), and you choose which menu appeals to you. Morning classes cover dishes like Tom Yam, Phad Thai, Green Curry, and Stir-Fried Chicken with Cashew Nuts. Afternoon classes teach Chicken Satay, Spring Rolls, Papaya Salad, and Steamed Fish Fillet with Lime and Chilli, among other options. The group picks four dishes together, though you can choose your own protein type and spice level for each one: all dishes come in vegetarian, vegan, spicy or mild versions.
Your instructors, Aon and Chien, have years of restaurant cooking experience and teach in a teak house that sits in the middle of a working rubber plantation where the school grows its own vegetables and herbs. You start with a welcome drink and cooking instructions, then move straight into the kitchen for the hands-on work. The class includes a theory and tasting introduction to spices and herbs from the garden, so you understand the building blocks before you start cooking.
After class you eat everything you've made, and the school sends you home with leftovers to share with friends and family. You also get a recipe book and a certificate, plus seasonal fruit, rice, drinking water, coffee and tea throughout the session. Hotel pickup and drop-off are included. The minimum group size is two people and the maximum is twelve.
