The experience
The class starts with a hotel transfer along the main road between Saladan and Kantiang Bay to the school, which sits in the heart of a rubber plantation where the kitchen garden grows the herbs, vegetables and spices you'll use. A local chef with long experience walks you through the essential ingredients in Thai cooking (tamarind, palm sugar, fresh basil, galangal), so you understand what makes each dish work before you start cooking.
The group votes on which four dishes to prepare from a menu of ten: Tom Yam, Pad Thai, Green Curry, Panang Curry, Thai Beef Salad, Fried Rice, Stir-Fried dishes with Cashew or Basil, Chicken Satay, Spring Rolls, Papaya Salad, Steamed Fish, Massaman Curry, Larb, or Sticky Rice with Mango. You can customize each one. Choose your protein (chicken, beef, seafood or vegetarian), adjust the spice level, or go vegan. Some dishes include making the curry paste or sauce from scratch. Once the four are selected, you cook them in the open-plan kitchen under the chef's instruction, then sit down to eat everything you've made.
You leave with a recipe book and a certificate. Leftover food can be packed to take back to your hotel or share with friends. The class includes a welcome drink, a surprise snack, seasonal fruit, rice, drinking water, coffee and tea. Free transportation home is part of the booking, and you'll receive the same meal whether you choose the lunch or dinner session.

Is this one for you?Book the lunch class if you want to cook and eat before heading back to the beach. The dinner class works better if you prefer to spend the morning elsewhere on Ko Lanta and return to the school in the late afternoon. Either way, the four-hour session fits inside a single day without rushing, and the group vote on dishes means you're cooking what the people around you actually want to eat.
